My software development team are looking to create an open public dashboard to display information from Jira to non-Jira users within our company.
We'd like the dashboard to list the latest release version for each project, along with the release date and the ability to drill down and view all the issues associated with each release.
I've had a look at all the available dashboard widgets, but cant see anything that seems to do what we require - unless I'm trying to go about this the wrong way completely!
Any assistance on setting up this, or something similar would be much appreciated.

Unfortunately, JIRA Software features (Releases) and gadgets are only restricted to JIRA Users, so I believe it's not possible at this moment to turn these features public.
I understand that you are trying to create a Gadget to display specific releases and specific issues from a project, but restricting issues outside that project from being accessed. Is that correct?
If that's what you are looking for, I can think about two possibilities:
1 - Use the plugin Better PDF Exporter for Jira (PDF View) to export your releases together with the issues.
2 - Although you could display issue information for external users, it would require you to allow public access to all your project issues, which I believe it's not what you are looking for. If I'm wrong and you have no problem to turn public all your issues in your project, you can try the steps below:
* Turn public your entire project
* Configure a JQL filter displaying all the issues from your last release
* Add the filter to the Filter Results gadget in your dashboard and name it with the release version
