How to clean the base (cloud version) to start again?

Hi, I tested the JIRA solution, and during the tests I generated a lot of projects, fields, etc.
Now I bought the solution and need to start the actual activities of my office.

Is it possible to erase my entire base and start over again?

Not natively.  But, you could install a Server evaluation locally (don't even need to licence this) and look for the <jira data>/import/startupdatabase.xml file - use your "restore" function in cloud, feed it that file, and you should end up with an empty JIRA.
