How to add non-working days

How do I add non-working days in Jira for my board?

I figured it out.  It only exists for company-managed projects.  I'm using Team Managed projects.

Could it be called something other than "Board Settings" because I am the admin for the board and do not see that when I click on the ellipses.

That's how it looks on my boards : it's the top item

What screen are you seeing that drop down list?  Are you on the backlog screen?

I'm on the board page. Got there by selecting a board (if more than one) from the left menu :

Thank you - for some reason I click on the 3 dots and don't see those options.

I figured this out.  This is only valid for company managed projects.
