My requirement is to add a custom field in the JIRA story to have multiple select fields so that one story could be assigned to multiple team members. Also after this, I want to pull emails(or names) of members in the python code.

To create a custom card for a Company-managed project, go to Settings > Issues > Custom fields. Then create a custom field of User Picker (Multiple users).
If it is a Team-managed project, you should be able to do that directly inside the project.
