I'm working on a setup where users fill out a single Jira Form, but I’d like to automatically split parts of that form into separate tasks assigned to different Jira projects. The idea is to streamline intake: one form, multiple outputs.

Has anyone implemented something similar? Are there workarounds, apps, or scripting options that allow for more granular control over form data in Automation? Prefer of course doing that on Jira Standard free options.

Welcome to the community.
There is a simple answer to this, that this is not possible.
When using a form, this is an entity on it's own.
You can copy it get field information from it, but the information is not strored a separate information in the Jira backed.
This may not be what I wanted to know, but it will save me time on further attempts, thank you!
I was wondering about using couple forms in one work item but that's also not possible.
Do you know of any add-ons that allow you to achieve this kind of form breakdown?

Multiple forms is possible.
Have an initial form on the request and use automation rules to add additional forms on the request that can be edited by the customer.
So the customer can fill additional information into another form. this form you could use for another task.
I'm not aware on other apps, all the one I know hava a single form option like the ootb feature
