I have 26 projects and growing in our Jira instance. Recently I received a request to have 24 Kanban boards in one project! Is there a limit to how many Kanban boards I can setup per project or per instance?
As the others have mentioned, there is no real technical limit, however I feel like there may be a better way of achieving what your user wants instead of so many Kanban boards (filters or sonething), so a conversation around what they’re looking to do may be a good next step.

No limit that I know of, but you will probably hit into an interface limitation in the left-hand project side of things when you are selecting from available boards. When you try to select from available boards, you get a pop up with board names listed - this list will overflow depending on your screen height. Perhaps this was patched by Atlassian at some point, perhaps not, but you can tweak the pop up with your own .css sourced through announcement banner if needed (although I have no example of that at hands, we used to workaround the pop up overflow that way). Should be possible to wrap the board names with a scroll bar I imagine.
Other than that there is no limitation that I've come across yet, and I've seen terrible things I can't unsee.

There is a technical limit to the number, but it's far higher than the number at which your people will tell you to stop being silly because the board list is unusable and they "can't see the wood for the trees"
I'd be looking at a usability limit rather than the technical limits.
