I see there is a rule in workflow creation to 'Block Transition Until Approval" and it probably is exactly what I need, but I see no documentation about how it works, and how one approves it, and how they get notified, etc.
I am not using service desk, and the configuration screens relevant to the Service Desk approval process did not appear. I just added the rule and that's it. Now what?

That condition is usually added automatically when the approval setup is done.

Thanks! This is exactly the document I was hunting for. However, I am thwarted at the step to select ADD next to Approvals
There is no Approvals anywhere on the screen for me to add something to. I am using a company-managed space on Jira Cloud as the documentation says, but I do not have that option. I am also a site admin, so it shouldn't be a permission issue.
Am I missing something?

When you select a workflow and edit it, do you see 'Approvals'?

I tried this followint steps:
Select the status "backlog", in the right panel appears the "approval section":
Click on "+" and configured as:
Then added the field approvers in the edit/view screen of related work type and then, in the work item view appears the required approval:
Important, the approval system apply on work items created after the change.

Are you sure you are not using Jira Service Management? I have that option on our JSM project, but not regular Jira projects.

I created a new trial and by default appears the approval feature.
The feature appears only if:
You can activate an external trial you too to test.

@Matteo Vecchiato I really appreciate your help here, but we are missing something here. My workflow is currently active on a project and we have a premium license.
Also, ROVO AI helper says that approval behavior is NOT part of Jira without 3rd party plugins.
But then again, the setup doc you sent me is very clear that it exists.
