I am long time user of Jira (more than 15 years) and i have used Jira in various ways however i have never really been happy how i put the estimates down in to jira for a product. Granted i haven't spent so much time in Jira laste few years so there could be some new features which makes what i need possible
What i need is that i can add big numbers (story points) on Epics and then later estimate Stories linked to the epic which are then subtracted from the main epic estimate.
For example for the sake of a release plan we would estimate let's say 10 epics with various sizes like 50-200 SP and then from that we would know roughly from the velocity in the past if it's doable or not. After that we would create stories for the epics when we start and i want to track how the plan looks so that the epic story points are not added to the story points added to the stories to it but rather subtracted from the total. I know that i can use the rollup feature in Plans but i guess my main problem is that when i add 20SP story i have to subtract 20SP from the the estimate on the Epic or is there a smarte way to do this ? How are you doing this ?

We role them up so our epics are comprised of everything underneath it. I would suggest reading this article about estimations from Atlassian and then working with your team to establish a consistent way to do estimations.
