Hi! We have a bunch of templates sitting in our Structure, but I'm wondering if there's a way to recreate/clone one of these epics, and pick and choose which child issues to add? From what I can see, I can only recreate and then resolve the tickets I no longer need.

If you're open to Marketplace add-ons, Issue Templates for Jira (developed by the company I work for) allows you to clone epics with selected child issues.

Welcome to the Atlassian community, regarding your question, there are several examples in the Community that can help you create an Automation rule to copy the Epic and all the children, for example: Automation: How to clone Epic WITH Child Issues AND their Subtasks (link: https://community.atlassian.com/forums/Jira-questions/Automation-How-to-clone-Epic-WITH-Child-Issues-AND-their/qaq-p/2588533)
So, as you describe, you want to choose some of the children, in this case you would need to add IF statement when iterating the Epic children and if the child issue meets the criteria then it gets copied.
