I am looking to add two additional text fields to the Epic Screen and I am not seeing the Epic option on the screen.

Are these custom fields that have already been added to Jira by a Jira Administrator, and you are just trying to get them added to a screen?
The process for adding new fields, that don't already exist in Jira, begins with a Jira Administrator creating the new custom fields.
The fields have to be added to the Field Configurations that apply to the projects where the fields will be used.
The Field Configurations are associated with Issue Types in a Field Configuration Scheme. A Field Configuration Scheme is associated with a project.
The fields also have to be added to Screens. Screens get associated to Issue operations (i.e. Create, Edit) through Screen Schemes. Screen Schemes get associated to Issue Types through Issue Type Screen Schemes. If all the issues are using the same Screen Scheme and you only want this to affect Epics, then you need to create additional screens and Screen Schemes that you can associate to the Epic issue type in the Issue Type Screen Scheme. An Issue Type Screen Scheme is associated to projects.
All of the above are steps that are executed by Jira Administrators.
When all of that has been accomplished, then when you are in a Create Issue or Edit Issue screen the field may still not be shown because each user can modify which of the available fields they see in those screens.
Can you tell us where in the process you are having problems? Providing an image of your screen will also be helpful.

I have created some custom schemes/etc. and in those cases I would just access the custom field, add the scheme and move on. I guess what I am asking is, is there a quick, clean way to do this for the Epic screen that I am missing?

Hi @Adam LaCoste - Epics, Stories, Tasks, and Sub-Tasks share the same issue type screen scheme by default. So, if you want to split out a specific screen setting for Epic, you'll need to take the following steps:

Thanks Mark. How will the new (Epic) Issue Type Screens/Schemes/etc. affect the existing tickets that are already using Epics?

Existing epics will immediately adopt the new screen once you associate the screen scheme with the issue type screen scheme. I would open the default screen on a separate window and have the two side-by-side to make sure you don't miss any of the fields that are in the default screen configuration.
