We would like to list the Service Desk transitions/workflows in alphabetical order so that when a tech works a ticket, they can select from the workflow list the status they need in alphabetical order. We have tried listing them in alphabetical order under each transition, but that does not seem to work.

In the project itself, i don't see how you can do that. However, Active workflows are arranged alphabetically in the JIRA system but statuses aren't.
