How do we get to know the Quality management process and Defect Management process in in Atassian? This is needed for CSV.

Have a look at their website, the blogs cover all sorts of stuff about their internal processes.  If you have specific questions, then you can ask them here, or raise them with sales/support as appropriate.  (You might want to explain the TLA CSV - most people associate it with "comma separated variable" files, not processes)

The obvious answer though - they use their own software to manage almost all aspects of their work.
