How do i manage the the issue type schemes used in the new gen project type?

We are checking if the new gen project fits us, but from what i can see the issue types and the ability to chain them is very limited, is there any way to add another level of child issues? 
At the moment i can only create as story from an epic, but i cannot create any child ticket under the story (task\ sub-task).
Am i missing something, or is this the best the new gen project can do with the issue types?

Subtasks are not currently available on next-gen projects as you already found. However, they are on the short-term roadmap! You can check out what's coming soon here (and see how fast features have been delivered already).
