When filtering an issue lust, I want to know when the issues were closed/complete. I know I have issues complete, but all the date columns in my issue list are empty

It depends on how you define if an issue is completed. If an issue is completed, when you set a resolution, then you should add the resolved column in the Issue Navigator.
