We've been using 2 projects on JIRA for a bit but realized that for our scope we're better off managing ourselves in one project. The second one still has about 30 tasks linked to it. How do I get them out of there so I can manage everything in one project with one board in it (And the do the sprints from there)?

Run a filter that includes the ones you want to move.  Use "bulk edit" from the tools menu (you may need check that this is available to you via "admin -> global permissions").  Select "move" and it'll ask you what project to move them to.
