I would like to add the client into our specific project, however, I don't want the client to see all the other projects. I can't find anywhere how...

Welcome to Atlassian community.
We understand that, in a first view, JIRA permissions can be a little complicated to understand due to the big variety of possibilities it gives you, but once you understand and configure it in a correct way, it will become usable and agile.
That been said, the restriction of a user to access just a single project will depend on how the other projects permissions are configured.
Explaining better, there is a set of permissions related to the activities a user can perform in a project (Browse project, Administer, Assign issues, etc). All these sets of permissions are configured in a Permission Scheme. So we have two possibilities:
1 - If other projects are configured to be accessible by any logged-in user, you will need to restrict it.
Basically, these would be the steps to properly restrict your projects:
1 - Navigate to JIRA Setting > Issues > Permission Scheme
2 - Click to access each Permission Scheme available in your instance and see what projects they are related to
3 - Add a single Role or more (Users, Administrators, etc) to the specific permissions that each role should be able to perform. P.S: The browse project permission is the permission that allows the user to access/read the project.
4 - Navigate to each project > Project Setting > People and define the users of each Role in that specific project, adding the new user to the correct role only in the project you want
5 - Remove from your permissions the settings Any logged in user, to restrict it to the roles you created
2 - If your projects are properly restricted with project roles, you just need to perform the following:
1 - Invite the user to your site. Since your projects are restricted, the user will not be able to access anything
2 - Navigate to project you want the user to access > Project Settings > People > Add the user to the convenient Role, so the proper permissions will be assigned for him ONLY for that project.
