We are a community of users of our own Jira instances. We have no access to the instance that you are using.
Subsequently, if some fields are no longer visible in items in your Jira instance you may want to consult with the Administrators of your instance.
If you can provide screen images here of how it used to appear and how it now appears (obscuring the actual data) we might be able to suggest items you might be able to click to find the fields again.
