My team has been working in a team managed project but we now need more advanced settings to work so have been moving everything into a company managed project and set everything up.
In the old project the backlog and kanban board had quick filters at the top for Epic, Label and Type containing pre-populated values that could be use to filter by selecting one or more values in the dropdown (see first image below where I can choose which issue types I want to filter the kanban board by)
In the new project I can only seem to create filters to toggle between a fixed JQL query created (see second image below).
Should I be able to set this up somewhere or is it a difference in features between the project types (or some other reason)?

Welcome to the community.
That is not a feature that is natively available in boards created from Saved Filters or created with Company Managed projects.
There might be a third party app that would provide that functionality. I have not researched to see if one exists.

Company-managed projects have a feature called Quick Filters, which you may use by defining a JQL statement to select issues. From your board, select the ... at the top-right, and then Board Settings > Quick Filters.
For your examples from the team-managed board, you could create quick filters such as:

I find I both end up creating a lot of quick filters making it a bit of a messy experience, but also for some they'll require maintenance. On the backlog I can filter epics in the epics panel but I'd like to do the same on the kanban board but for that as epics come and go i'd have to maintain those quick filters. I think ultimately it's just a sign of some over complexity in how we work we need to solve.
