How do I create Jira Query that will create a csv output with data from all tickets in a project

I want to produce a csv output that includes selected fields from all tickets in a project board.

You don't state whether you're running Jira-Server or Jira-Cloud, but at least in Server, you can execute the filter that is used for your board, choose the fields in which you are interested, and then click the Export button in the upper right corner and choose CSV (Current Fields). You will be limited to some number (likely 1000) of issues; that limit can be increased in the Advanced Settings if needed.

It may or may not. I usually include that disclaimer, as there certainly are differences between the two. Try what I suggest; it may be applicable to cloud.
