How do I Deactivate or Terminate a JIRA Project?

We have a project that is no longer active, so we'd like to terminate it or deactivate it, but we don't want to remove it and all of its issues altogether. How do I do this?

The usual trick is to create a permission scheme that says "browse: well, no-one really", and use that for the project you want to hide.
