I am not able to delete the previous status options that were available nor am I able to create a copy of the workflow in order to inactive it and then edit/delete the statuses.

You should be a jira system admin to make changes to the workflow. Are you an admin ?
Do you get any error or you don't have an edit icon/button ?
Are you using Jira cloud or Datacenter/server version ?
