How can I separate story points by task status (e.g., 'In Testing') in the sprint backlog?

In the backlog overview for each sprint, I can see the total story points for 'Done' and 'In Progress' tasks. However, the 'In Progress' category also includes tasks that are in other states, such as 'In Testing'. How can I separate these states so that each one (like 'In Testing') has its own column for a clearer breakdown of story points?

The short answer is that you can't. The progress report is based on the three status categories (To Do, In Progress, and Done). These are predefined and cannot be changed. The only thing you can do on the status level is change the category that the status belong to.
