How can I see all tasks from various projects in one list organized by priority?

Welcome to the Atlassian community.

From the Filters menu select View all issues

There you can create search filters to select the issues you want to see.

If you've never worked with creating filters before you should read this documentation:

Do note that the filter is limited to returning 1000 issues. If you have more than that in your system you will not be able to see them in a single search results set.
