How can I edit/add what's displayed in the Backlog view?

I want to add a couple more fields to the backlog view? Looks like I'm limited to 3.

Adding three fields to cards display is a hard limit. You can't add more.

There is a change request to increase the limit. You can add your vote to it:

You must be a registered user to add a comment. If you've already registered, sign in. Otherwise, register and sign in.
