I'm writing this question because I can't delete one of my product (site).
I created some months ago a site from which I was testing the Jira Project management. After few months, I decided to clear all contents and sites.
Next, I created an other site. After days, I reopen the old url linked to the old site I deleted before and now I see each of them as sites available.
I need to remove one of them. I can't find Admin setting of the old site anymore.
Can you help me?

Does that not delete the whole shebang ?
I'm having the same kind of issue; someone has created a site within the organisation so now there are 2, "Companyname" and "Companyname-team". The "-team" one is the one that needs to be deleted, but following that guide looks like it will take them both out.
I'll keep digging and update this if I find out how to do it :).

Sorry, I misunderstood.
To delete a single site you need to cancel the subscriptions to all the products that are part of that site.
When you complete the request to cancel the subscription, there will be a delay before it is actually cancelled. The product will remain available until the next billing date. Then there is another grace period where the product is deactivated but it is still possible to reactivate it, in case you change your mind. You can learn more about those time periods in the document I referenced above.
