How can I copy a list of options from Excel to a custom field (single select)?

Single Selects are usually predefined, you can't (as far my knowledge goes) dynamically fill it from Excel.
If is a custom field you can edit it by hand to include the options you need:
Setting wheel -> Issues -> Custom field - create one or edit the existing.
