We Have A Agile Delivery Board (Reporting) And We Have Some Custom Fields Set-Up With A Drop-Down List With Values, How Do We Restrict The End-User To Select Only One Option?

I am not sure that I understand your question. Is the field a multi-select field and not just a single select field? And you only want them to select a single value?
Or is it a single select field already, but you want to limit which options in the list they can select. For example, Options are A, B, C, D but this user can only select A or C.
Which situation do you have?

We Have An Agile Delivery Report, With Some Custom Fields With A Number Of Different Options And At Present The End-User, Can Click The Drop Down Box And Select More Than One Choice.
E.G.:
1. A.
2. B.
3. C Etc, Etc.
At The Present Time The End-User Can Select More Than One Option From The List, So, They Can Select Two, Three, Five Etc.
We Want To Limit The End-User So They Can Only Select One Option From The List And Not 2 Or 3 Or 4.
For Example: The End-User Can Only Select One Item From The List. It Can Either Be "A" Or "B" But NOT Both.

Then you will need to create a new custom field of a single select type. Unfortunately, you cannot just convert the custom field from one type to another.
You can copy the existing values for that field in the current issues to the new field if needed.
