Hello, I have several kanban boards placed in order of preference in a software project. Now when I choose the 3rd one it gets moved to the top of the list. How do I stop this from happening?

Yeah, sometimes Jira likes to "help" you by showing you the most recently used item because they think that what you are going to keep using next. The old navigation did not reorder boards on a project like that.
I suggest you open a support ticket with Atlassian and ask them about that. Please post back her with the answer/solution for others to learn also. Best of luck!
Yes, agreed. But one board definitely can be fixed by adding to starred.

This behavior—where the board you select moves to the top of the list—is a known issue in Jira Software Cloud. Currently, when you click on a board from the list under a project, that board is promoted to the top. However, this behavior is inconsistent and there is no setting to disable or customize this automatic reordering at this time. Atlassian is aware of this and has an open bug report tracking the issue. Unfortunately, there is no workaround available right now to prevent the board order from changing when you select a board

Additionally, there is a related feature request to allow users to manually sort boards or have them appear in alphabetical order, which would give you more control over board order. As a temporary workaround, you can "star" your most important boards so they appear in the starred section for easier access
