We have set up a project to be team managed.

We want to add developers to our Jira who only have access to that project.

We have created a group where all devs are members

At present the global permissions to see "jira software" mean that the group sees all other projects.

How do I change it so they only access one?

You'll need to remove their access to the projects they should not be able to see.  This means doing things like changing the permission schemes for those projects to stop using things like "any logged in user can browse the project", swapping it to a role or group that your more limited users won't be in.
