I'd recommend a good first stop is Atlassian's YouTube channel, where you'll find videos on:

• Introduction to Jira Work Management
• Creating your first project
• Understanding project details
• Creating issues
• Configuring workflows and boards
• Using custom fields and forms

You should also check out the Atlassian University's Getting Started With Jira Work Management course:

To access project templates go into Jira, select "Projects" then click "Create Project" in the dropdown menu. You'll then see a range of templates under Work Management. Pick the one that best suits your project/type of work.
