Get Notification for ALL issue created/ updated in a project

Hello, Is there any way to get email notifications for ALL events within a project in Jira (new issues created, any updates made to an existing issue, ...) without anyone specifically mentioning/ tagging my name/group?

Yes. However you need to create a project role and assign yourself to it in EVERY project. Then in the notification scheme have that role notified for everything you want to be notified on
