For some reason after downgrading to the Free version to see how limited we'd be on this tier, my administrator privileges have been removed from our project with no way to add it back as we're on Free tier. I'm an org admin so I have access to everything else. I created the project originally and the organization and have Jira admin privileges.
Any ideas how to fix this apart from upgrading immediately again?

On a free plan, you can't update permissions indeed, as @Alexander Hohmann rightfully mentioned.
When you downgrade from a paid plan into free, your permissions are locked in the state they were at while you were on the paid plan. As described in this support article, the only way to fix this is to get back into a paid plan and update permissions there before reverting back to free.

I'm aware it's most likely that, but it's strange as I currently have no option to get this role back, everyone else in my organization has the Administrator role. I'm currently on the project as Lead, and not in the people section, nobody has the option to add me due to plan limits.

That's how it should be, except me. For some reason I don't have project admin privileges, that's my current issue. Everyone else does, not me.

Have you checked your storage usage? If you exceed 2 GB in the free version, there might be some functionality freeze involved, but I am not sure.
And then there might be issues with company-managed projects and the involved access rights scheme.
And then there is the user number limitation.

We haven't exceeded our storage limits and we can't change our access scheme at the moment due to plan limits.
