Quisiera saber como crear varios flujos de trabajo para un mismo proyecto? Muchas Gracias!

You can have multiple workflows per project but only one workflow per issue type.  If you would like to have multiple workflows you will need to have multiple issue types in your project.  You can then associate the workflows you create with issue types in the project workflow scheme.  

So you will need to do the following:

1. Determine how many workflows you need and create them.  https://support.atlassian.com/jira-work-management/docs/how-to-create-workflows/ 
2. Have an issue type for each workflow you intend to have, you might need to create new ones.  https://support.atlassian.com/jira-cloud-administration/docs/add-edit-and-delete-an-issue-type/ 
3. Associate the workflows with the issue types through the project workflow scheme. https://support.atlassian.com/jira-cloud-administration/docs/configure-workflow-schemes/
