Gostaria de visualizar apenas issues que moveram de um status definido no meu workflow para outro status, em determinada faixa de data.

I would like to recommend you this blog post on becoming a Jira Search Ninja. It has a lot of examples on how you can perform history searches in Jira and I guess you will be able to find an answer to what you are trying to achieve there (and more).

If I understand your question correctly, you are looking for something like this:

Project = ABC AND Status CHANGED FROM "To Do" AFTER -2w
