We have a custom field called 'Clients' but it's not showing in the 'Statistic Type' drop-down.  I found a something in the Atlassian Knowledge Base ( https://confluence.atlassian.com/jirakb/some-fields-are-not-showing-in-any-dropdown-menus-of-dashboard-gadgets-922648656.html ) that says "If any field is configured without a Search Template, such field won't be searchable and as a result they won't be displayed in gadgets."  This field does have a Search Template however.

Does anyone know what else the issue could be?

The searcher also needs to be able to return a known list type data set - one with known boundaries (e.g. a list of countries, colours, people, etc).  You can do this for select type fields, but numbers, dates, and plain text cannot, as the data range is effectively infinite.

Ah, I get it.  I was basically comparing it to labels and thinking that if labels could be entered on the fly and included in the pie, then why couldn't clients? But I do see that label data is stored in a different way rather than just being what people randomly input.

Thank you!
