I want to invite an external user to a particular project hence other projects must not be visible to him except the one he has added to.

Welcome to community!
If you have public projects you can create two seperate groups for your internal and external users. You can add internal user group to public projects that your internal employees see. And for externals, you can add them one by one or with group to your specific projects.

If you have more than externals that you can hadle, it's better to user external share apps. With this kind of apps you can generate links for your externals and you don't need yo provide access to your externals.
