Cannot see recently created Epic under Epic Link (the result: Epic with key 'XXXXX' does not exist.)

Is the epic in question associated with a Next-gen project? Epic link is only valid in Classic projects (currently).

No idea TBH. You might go to JAC and perform a search for an existing issue on this and vote/watch. I would do so but oddly there is a bug when trying to search for “text” when there is more that one word in the text string. It will work on desktop. Are you able to access that Epic directly? If yes, can you click on the + in the 'issues in this epic' section and try to create?
If you are not able to access the EPIC directly, then you will have to check the permissions and security levels..

The Epic link is a drop down list, where you can select the epic name (Note this is not the same as the summary of the epic). Like below:
From the pictures you sent I can see that you use a complete URL which will not work.
So try to select one from the drop down. If no epics appear, make sure you have the correct permissions in the project where the Epic has been created.
