Is there any way I could change the sender's email from the automation and replace it with my company's email? My goal is to email market against a list of customer domains that I have on the site.

This isn't possible at this stage; there is a feature request which covers this need though, check out AUTO-76

Did you change the name of the sender in the email address in the image you show? That should do it.
