Effect of deleting custome fields and schemes

Can you tell me if I archive projects can I delete custom fields and schemes that are only used for that project?  If I do this when I unarchive the project with the custom fields and schemes be recreated or will the project be useless

No, if you delete schemes or fields, they are gone forever and will not be re-recreated when you unarchive the project.
