If I add a customer’s email address to my Jira Service Management project as a Customer, does that automatically create an Atlassian account for them?
Also, will they then need to log in using their Atlassian account credentials instead of the old username/password method on the customer portal?

Yes, I experienced the same behavior. I tested this before, and after being added, the customer had to log in using their Google/Atlassian account and could no longer use the previous password login method on the portal.
I’m not sure whether this is the expected behavior though - waiting for confirmation from others as well.
