I want to know if Jira 6 requires more memory than Jira 5, assuming that the current instance is running at ~60% memory load, which is what we found to be safe for stability.

Can we upgrade to Jira 6 without having surprises regarding memory load?

You should be fine with the current memory settings. JIRA6 only improves performance. Over the time, you might want to review this as the load increases.
