Is there a way in which to get Confluence to display more than just the Key of the Parent Linked issues, when running a query? I'd also like to be able to show the Summary description, to provide more context for the results.

If you are referring to the jira filter, this is not possible unless you have an automation rule that would write the parent info to the actual ticket as another customfield.
You will have to go through the markeplace to look for this functionality. Eazybi reporting provides this capability where you can have a column that refers to any of the parent's ticket field.
