I was recently laid off from my job and i want to keep my skills sharp. Does Atlassian have a free demo instance that will come with prepopulated issues to work?

You can sign up for a Jira subscription of your own. As long as you set up no more than 10 years, you can continue to use it for free. You can learn more here:
