Default name for epic and stories
1. Why do I get these default names after I create a ticket/issue?
2. How to stop getting that? Instead of that, I would like to select the epic and story name explicitly.
3. How to rename these epic and story names?

1. Those are the Issue Keys assigned automatically by Jira when you create a new issue. The Issue Key is comprised of the Project Key (a short alphanumeric identifier for the project in which the issue is created, in the above example SCRUM) and a number assigned sequentially within that project representing the order in which issues were created. SCRUM-1 is the first issue created in the project with Project Key "SCRUM", and SCRUM-2 is the second issue created in the project with Project Key "SCRUM". In the Breadcrumbs display that you have shown SCRUM-1 is an Epic that is the parent issue for SCRUM-2.
2. You can't stop getting those. Creation of an Issue Key for each issue is fundamental to the architecture and design of Jira. These are assigned automatically by the Jira system. You can't specify the value for issue keys. You specify the "name" for each issue in the Summary field for that issue.
3. You can't change the issue keys. These are the unique identifiers for the issues that can be used in filters and searches. As a user of Jira you set the Summary field for the issues.
Note that the Summary field does not display in the Breadcrumbs, which is the screen image you have provided. You would see the Summary for the current issue you are viewing below the breadcrumbs. Example:
