The proposed date at start sprint says: 18-17-21 20:17. A bit strange. The date format is YY-MM-DD.
When I correct the date entry with the date picker to 18-08-21 13:00. I get "The start date of a sprint must be before the end date."

Unfortunatly my team member just started the sprint (with the default wrong dates), therefore I don't have the screenshots. I made some of another projects with also strange behavior. E.g. screenshot with month number 19 and another project month number 33 (suggested by default) , opening datapicker suggests date two years ahead by default. This project doesn't give a failure starting the sprint. But there are still a lot of strange behavior things.

Thank you for the details.
Hope you don't mind, but I accessed your instance to check the Advanced settings and look and feel and saw that what is causing this is the jira.date.time.picker.java.format.
I've added the same configuration on my test instance and this was the result:
Then I reverted one by one and the only one that I reverted and the date got normal was the jira.date.time.picker.java.format.
Please, go to Jira Settings > System > General Configuration > Advanced settings and click on Revert for jira.date.time.picker.java.format.
Then you can test starting a sprint to confirm if the date will show correctly.

Just for us to better understand and help you with this issue, if possible, can you please send us a screenshot of where this date format is appearing?
Also, can you send us the steps you are following when adding the start date? I tested on a test instance and it works, so perhaps you are following different steps to do this.
Was there any change related to the date on the General settings?
