I am currently testing Jira Cloud and Jira Data Center for my company.
While my bosses opted for Jira Data Center, I have now found out that Jira DC will be decommissioned in 2029.
My bosses main concern is about the security of the sensitive data which would be inputted in Jira Cloud by us. Where is the data stored, who has access to this data, etc.
Any advice on this, please?

Atlassian has confirmed that Data Center products will reach End of Life on March 28, 2029. Here you can find the information.
Where Data is Stored ?
Atlassian Cloud allows you to choose where data is hosted. Regions are like US, EU, UK, Australia, Germany, India, Japan, Singapore, South Korea, Switzerland. See the information here.
By default, Atlassian places Jira and Confluence data in the AWS region closest to where the majority of your users are. If you need stricter geographic constraints, you can use data residency features. You can find information about the infrastructure here.
Security Measures?
Atlassian introduces and implements encryption at rest, role-based access management, multi-factor auth, periodic revires of access. They claim logical tenant isolation so that customers' data don't mix with another. You can read more about Security measures here
