I'd like to know what I need to enable/contract and what the price would be for daily backups of JIRA and Confluence.
Atlassian does not provide such service. There is a company called rewind that does - https://rewind.com/products/backups/jira/

Rewind would be happy to talk to you about backups for Atlassian's software. Atlassian's solution can work for some customers on certain plans, but it has limitations, among them:
1. It can only restore back 30 days.
2. It can only be restored to an empty new instance. So if you restore, you're going to lose all the work that's happened since the backup time you're restoring to.
Rewind can perform surgical restores so that it only restores what you need, and doesn't touch anything else. So if you need to restore one Jira project or Confluence site back a week, the rest of the work isn't lost.

You can look at 3rd party solutions like suggested by @Shai Gilboa , but Atlassian is provinding such as service as well.
