I am looking to create a custom date field that will initially populate with the date a task is created. I also need to be able to have editing capabilities of this date field. Is this possible to do?

Date "Custom Fields" can be auto populated during the "Create" event of the workflow to contain the current date (via a workflow post-function). Then just add this date custom field to the "Edit Screen" so you can edit it anytime.
