We would like to know possibilities on creation of tickets in a project via email and also entering data to the custom fields(Eg, Version, Sprint, other custom fields) when a ticket is created.

It's not possible to fill field value via email, field value will be the default value which you set for a field.

The default mail handlers built into Jira will import summary, description and priority, and they can do some stuff with people (reporter and watchers etc)
