We have a ticket queue setup in Jira, and we have a few fields that are mandatory to fill out prior to closing. Ideally, I would like to be able to mass select tickets, and assign details of certain fields to them (e.g. organisation, affected service, etc. which are present in our Jira).
Is there a way I can add to the options shown in the screenshot to allow this?

Easiest would be to go to your issue search (and not in the queue) and perform the search on the issues you wish to edit.
From there you can do a bulk edit and you'll see all the fields which you can modify in the next step.

The short answer is no, currently you cannot configure what options you have to choose from in the queue view.
